Raw Vegetable Salad
Chopping or chewing raw cruciferous vegetables results in the release of enzymes that support liver detoxification.

Serves 1 - Metabolic Types (Di, I, C, De, O, S)
Ingredients
For the salad:
30g avocado, diced
30g Tenderstem broccoli, finely sliced
30g radishes, cut into wedges
30g red cabbage, shredded
30g watercress, spinach or rocket leaves (or a combination)
1 tsp hazelnuts, chopped
1 tsp pumpkin seeds
For the dressing:
2 tsp extra virgin olive oil
1 tsp apple cider vinegar
½ tsp lemon juice
Salt and pepper
Method
Whisk together the dressing ingredients until emulsified. Toss the
salad ingredients with the dressing in a bowl, then serve immediately.Serve with a protein portion
of your choice (see pages 152–3).
