Raw Vegetable Salad

Chopping or chewing raw cruciferous vegetables results in the release of enzymes that support liver detoxification.

Serves 1 - Metabolic Types (Di, I, C, De, O, S)

Ingredients

For the salad:

  • 30g avocado, diced

  • 30g Tenderstem broccoli, finely sliced

  • 30g radishes, cut into wedges

  • 30g red cabbage, shredded

  • 30g watercress, spinach or rocket leaves (or a combination)

  • 1 tsp hazelnuts, chopped

  • 1 tsp pumpkin seeds

For the dressing:

  • 2 tsp extra virgin olive oil

  • 1 tsp apple cider vinegar

  • ½ tsp lemon juice

  • Salt and pepper

Method

  1. Whisk together the dressing ingredients until emulsified. Toss the
    salad ingredients with the dressing in a bowl, then serve immediately.

    Serve with a protein portion
    of your choice (see pages 152–3).
