Almond Pecan Granola
I have been making my own granola for years and constantly tweaking it. I finally found the right mix of nuts and seeds and sweetness. But you may prefer more or less oats/seeds/nuts ratio.
Almonds are packed with vitamin E which is important for lovely skin.
Pecans help to lower cholesterol.
Pure Maple syrup is my sweetener of choice. Its also rich in minerals. For baking go for the richer Grade 2.
150g pumpkin seeds
100g sunflower seeds
4 tablespoons chia seeds
3 tablespoons Pure Maple Syrup
3 teaspoons ground cinnamon
1/2 teaspoon vanilla powder
3 tablespoons coconut oil
Preheat oven to 180 degrees fan
Pulse nuts in food processor for 20-30 secs until just broken up. Add them to mixing bowl with oats and seeds.
Melt syrup, cinnamon, vanilla and coconut oil in a pan over low heat. Then mix this into dry mix.
Spread onto a large baking sheet and bake in oven for 30 mins.
Stir the granola a couple of times during cooking to avoid the top burning.
Leave to cool then store in airtight container.
