Anti-inflammatory Breakfast Eggs


Turmeric and cinnamon can help to reduce inflammation and cumin and black mustard seeds have loads of health properties. Coconut oil is a great source of immediate energy and can help you feel full for longer. 


  • 1 tablespoon coconut oil 

  • 1/2 tsp each cumin and black mustard seeds 

  • Pinch turmeric and cinnamon and black pepper

  • Small sweet potato and I courgette, diced 

  • 2 eggs, cracked and placed in a small bowl each 


  1. fry the spices on the oil on a medium heat until the mustard seeds start to pop

  2. add the sweet potato and 2tsp water and cook for 2 minutes

  3. add the courgette and stir 

  4. make two holes for the eggs and carefully tip each egg from the bowls into the hole 

  5. cover and cook for about 5-7 minutes until the eggs are cooked to your liking 

  6. serve with avocado for some added healthy fats
