Antioxidant Salad

I'm just back from holiday and my fridge was pretty bare. I couldn't face the supermarket on a lovely warm day like today so I went to The Fresh Fish Company to see what I could get.
With Vicky's help I managed to sort out today's meals with lovely fresh ingredients.

In this salad I put pea shoots (full of antioxidants and phytonutrients helping to reduce inflammation and rich in folic acid), watercress (Vitamin A, Vitamin C, Vitamin E (Alpha Tocopherol), Vitamin K, Thiamin, Riboflavin, Vitamin B6, Calcium, Magnesium, Phosphorus, Potassium and Manganese), lettuce, avocados for healthy fat and potassium and Ortiz sardines rich in omega 3 fats.

A simple salad dressing to go with it

1 lemon, grated zest and juice
1 crushed garlic
4 tablespoons Olive oil
Salt and pepper

Fresh plaice baked whole in the oven for supper followed by these lovely cherries.
