Asian Kale Slaw

For the Salad

  • 4 handfuls kale stalks removed 

  • 3 handful shredded cabbage (I use a mandolins)

  • 2 cups prepared shredded carrots

  • Small bunch fresh coriander,chopped

For the Dressing

  • 3 tablespoons creamy peanut butter (I like biona)

  • 1 tablespoons unseasoned brown rice vinegar

  • fresh lime juice, from one lime

  • 3 tablespoons avocado oil or other flavourless oil 

  • 1 tablespoon Tamari

  • 1 tablespoon coconut nectar or raw honey 

  • 1 large clove garlic, roughly chopped

  • 1-inch square piece fresh ginger, peeled and roughly chopped

  • 3/4 teaspoon salt

  • 1/2 teaspoon Cold pressed sesame oil


Directions

  1. Combine dressing ingredients in food processor or handheld blender then massage into salad using your hands.  

  2. Sprinkle over pumpkin seeds and cashew nuts or cooked shredded chicken
