Cajun Salmon and Broccoli Kale 'rice' en papillote


I needed to make a quick supper last night and this fit the bill. Salmon is so versatile and goes with so many herbs and spices. 
I pulsed Kale and broccoli to rice like grains then placed this on parchment paper and sprinkled a little water on top. 
I put the salmon on the veg then squeezed half a lime over and 1 tablespoon Olive Oil. 
Finally a good sprinkling of Cajun spice mix on the salmon. 
I folded up the paper to make a parcel and placed on a preheated baking sheet for 12 minutes at 180 degrees. 
Serve with fresh coriander.
