Cajun Salmon With Cumin Cauliflower Mash

 

Easy Monday supper. 
Sprinkle Cajun spices on the salmon. Steam the salmon and cauliflower for about 5 minutes. 
Put the cauliflower and a little cooking water, 1/2 tsp Cumin, 1 crushed garlic clove and some lemon olive oil, salt and pepper in a food processor or hand held blender. Process until smooth. Add chopped flat-leaf parsley and enjoy!
Fish freezes really well and defrosts quickly so great when you don't have time to shop on Mondays!
