Cauliflower 'Rice'

Makes about 4 portions

  • 2 medium cauliflowers, cut into chunks

  • 1 tbsp water 

  • salt and pepper


  1. Place cauliflower chunks in a food processor and pulse until broken down into rice-size pieces.

  2. Heat a pan over medium heat; add cauliflower 'rice', salt and pepper and water.  Cover pan and steam/cook until heated through, 4 to 5 minutes. Remove lid and let it dry out a bit for about 3 minutes then fluff 'rice' with a fork. You can add freshly chopped herbs if you like.


You could also use the medium side of a box grater to create cauliflower 'rice' instead of a food processor.
