Chicken and Avocado open 'sandwich'

 

I am gluten-free so I cannot tolerate bread. I don't miss sandwiches and I especially don't miss that awful bloated feeling after eating one. But sometimes I feel like comfort food. And for me that's toasted buckwheat bread with layers like a sandwich filling. So this is my go to lunch.
I top toasted buckwheat bread with homemade artichoke paste, spinach, avocado, sauerkraut and chicken. 
Lots of veg, protein and some good fats. A perfect lunch that leaves me feeling full but not tired!
