Chicken Tagine with Griddled Courgettes
First night back after my city break and not enjoying this dreary weather. So I felt like a comforting Tagine for supper. It's also so easy to throw all the ingredients in.
I sautéed the onions and garlic then added all the spices (turmeric, Cumin,coriander, paprika, Ras al hanout). I added chicken thighs, chicken stock, tin of tomatoes, sweet potato chunks, dried apricots and cinnamon sticks. I put this in the oven with the lid on for 1.5 hours at 150 degrees until the chicken was really soft.
I served it with toasted flaked almonds and chopped fresh coriander. And in my lovely new stoneware from Porto.
