Chickpea and Bean Chilli with roasted sweet potato

 

Chilli made easy in my pressure cooker. 
Soak the chickpeas and beans overnight then rinse and drain and place in pressure cooker with vegetable stock. Or you can add tinned pulses (less cooking time). You can add a tin of tomatoes if you like. I sautéed garlic and onion, and added cumin, coriander, paprika and chipotle chill powder. 
Cook for 10 minutes approximately or less with tinned beans. Depends on your pressure cooker. I made a huge batch for my freezer and I’m enjoying that with a roasted sweet potato, rocket and tender stem broccoli.
