Chilli Chicken, Cumin Cauliflower Rice, Watercress and Pesto (dairy-free)


Leftovers from last night just as so nice eaten cold for lunch with an extra squeeze of lemon juice and some Watercress. 
For the rice - I pulsed one whole head of Cauliflower in a food processor. I heated 1 tablespoon coconut oil in a pan with some ground Cumin then added the Cauliflower and a tablespoon of water. I steamed this with the lid on for 5 minutes then without the lid for 3 mins.
I sautéed the chicken breast with some chilli. 
For the Pesto I placed the following in a mini processor and pulsed - 2 large handfuls of basil, a little nutritional yeast (for a cheesy flavour), salt, garlic, lemon and olive oil.
