Chocolate Avocado Mousse
125 nut milk
3 Medjool dates, pitted
1 ripe avocado, stoned and peeled
30g cacao powder
1/2 tsp vanilla extract or 1/4 tsp vanilla powder
1/4 tsp cinnamon
pinch sea salt
strawberries to serve
Warm the nut milk in a pan until almost simmering. Add the dates and set aside to cool or transfer to the fridge.
Once cool blend the dates and milk in a blender or NutriBullet.
Place the avocado in a food processor and pulse about 6 times. Add all the other ingredients and process until smooth and creamy.
Divide between two coffee cups and chill in the fridge for 1-8 hours then serve with the strawberries.
