Chocolate Pecan Fridge Squares

I really love dark chocolate. I normally have a bit after lunch but occasionally I feel like something else chocolatey. These little squares hit the spot. They have a nice crunch from the pecans and cacao nibs. Cacao nibs are full of antioxidants. They are sweetened with just two dates so add more if you prefer it sweeter. You could also sweeten with a little maple syrup.

  • 200g Pecans

  • 60g Cacao nibs

  • 2 tablespoons Cacao powder

  • 2 Medjool dates, pitted

  • 2 tablespoons cacao butter, melted

  • 1 tablespoon butter, ghee or coconut butter, melted

  • pinch of salt

1. Place all the ingredients into a food processor and pulse until you get a grainy texture.

2. Press down firmly into a lined baking tin. I used a 1llb loaf tin.

3. Place in the fridge for 2 hours.

Keep in the fridge for a week or freeze.
