Cod, Samphire, baby spinach and Avocado with Gremolata

 

Fresh and full of flavour but a lovely healthy meal. 
If you are detoxing after Christmas this is a great meal. White fish is easy to digest so it's the only protein source I recommend in the first week when detoxing. Detoxing on only juices is not recommended. For one our bodies think that we are in starvation mode so will only store fat! Try using apple cider vinegar instead of lemon to aid digestion and increase metabolism. 

Steam the cod and samphire and assemble the other ingredients.

Make the Gremolata -
Large handful flatleaf parsley finely chopped
1 crushed garlic clove 
1 lemon, zest and juice
3 tablespoons extra virgin olive oil 
Mix together and drizzle over.
