Friday night curry 

 

Really easy chicken curry using a whole leftover roast chicken. Who wants to spend hours cooking on a Friday night? 
I sautéed 2tsp each of Kashmiri Masala powder and Cumin and a pinch of Kashmiri Chilli. In a nutribullet I blended an onion, 3 garlic cloves, some fresh ginger and 5 tomatoes. I added this to the spices and cooked it down until reduced. I then addded 500 ml chicken stock and simmered for 10 mins. I added the chopped cooked whole chicken and half a cup of coconut cream. 
I served with Pilau Cauli Rice (Cauliflower rice cooked with pilau rice spices). Fresh coriander and coconut yoghurt to garnish.
