Fried Eggs Vegetable Hash

 

I'm needing a hearty breakfast today ahead of my seminar this afternoon. 
So in a skillet I melted Coconut oil and added turmeric, Cumin and cayenne pepper. I then added grated sweet potatoes, broccoli and leeks and black pepper and steam sautéed using a little water. I placed a lid on top and cooked gently. Then I added two eggs and put the lid back on until cooked. 
If you are on phase 2 of the Metabolic Balance Programme you could sauté the spices in some vegetable stock instead of oil.
