Garlicky Chickpea & Parsley Dip

 

Great with just about anything! Delicious in your packed lunch for work. 
Roast the whole bulb of garlic wrapped in foil in a hot oven for 20 minutes until soft. 
Squeeze out 6 cloves into a small food processor 
Add I Tin of Chickpeas 
1 large handful flat leaf parsley 
3 good glugs best olive oil 
1/2 lemon squeezed 
Salt and pepper 
Pulse until smooth or chunky depending on taste. 
Some people find it hard to digest chickpeas but blending them into a paste like this often makes them easier to digest.
