Goan Xacuti Curry with Monkfish 

 

An easy Saturday night curry. 

Fry 4 crushed garlic cloves and 75g desiccated coconut in coconut oil until light brown. Put this in a Nutri Bullet and add 4 teaspoons Xacuti curry powder (or use another curry blend) and 1 tablespoon water and blend to a paste. 
Fry 1 chopped onion then add the paste and fry for 5 minutes. Add the monkfish (about 600-800g for 4 people) and cook for 5 minutes then add 250ml water and 1 tablespoon tamarind paste. Simmer for 5 minutes. Serve with vegetables and rice for those that need it.
