My favourite sauce/dressing to go with anything from poached Salmon to lamb chops. Lots of anti inflammatory ingredients. 

Large handful of flat leaf Parsley, finely chopped 
2 crushed garlic cloves 
Zest and juice of 1 lemon 
4 tablespoons olive oil 

Mix all the ingredients and serve. If baking fish in the oven you can spoon over half the Gremolata before it goes in the oven.
