Jerk chicken with Coconut Rice

Marinade the chicken the night before to save time after work the next day. It also makes the chicken breasts really tender and quick to pan fry.

I try to get fresh ginger into to my cooking as much as possible for its health benefits. It goes really well in this recipe along with garlic, chilli, tamari, All spice, fresh lime juice and the juice from half an orange (I used this to replace the usual brown sugar in standard jerk chicken recipes).

I serve this with coconut rice for my family and (sweet potato for me as I eat a low-grain diet) along with lots of greens.
