500g lamb mince
1 crushed garlic clove
1/2 onion, finely chopped
3 tablespoons flat-leaf parsley, finely chopped
1 teaspoon ground cumin
1 tablespoon lemon juice
1 teaspoon sea salt
Coconut oil for frying
Serve with my Spinach Tahini Dip that I sent out last week.
Place all the ingredients in a large bowl and mix well. Scoop out about 2 tablespoons mixture and form into sausage shapes.
Heat a griddle pan or frying pan with some coconut oil and cook the Kofta for about 8-10 minutes, turning occasionally. They could also be grilled on a BBQ.
Serve with salad and Spinach Tahini Dip.
