Mini Banana Loaves

These delicious banana loaves are nutritious and filling.  They are great for breakfast and children's lunch boxes. Instead of using glutenous flour I have used ground almonds and flaxseeds.  You can make this as a whole loaf using a 1llb loaf tin and baking for 1 hour. 

Lucuma is a South American fruit high in beta-carotene and B Vitamins and makes a great natural sweetener.

Ingredients

  • 3 very ripe medium bananas, mashed

  • 50g butter, melted and cooled

  • 2 tbsp xylitol 

  • 1tsp ground cinnamon 

  • 2 tsp vanilla extract or 1/2 tsp vanilla powder

  • 1/2 tsp each of bicarbonate of soda and baking powder

  • 1 tbsp lemon juice 

  • 200g ground almonds

  • 40g ground flaxseeds

  • 1 tbsp lucuma powder (optional)

  • 3 large eggs

  • pinch sea salt

Directions

  1. Preheat the oven to fan 170 degrees. Place 6 paper mini loaf cases on a baking sheet.

  2. Place all the ingredients into a food processor and blend well.

  3. Pour the mixture into the loaf cases and bake for 30 minutes.

  4. Leave to cool completely on a wire rack. 

  5. Eat straight away or store in an airtight container in the fridge for up to 5 days.
