Mini Banana Loaves
These delicious banana loaves are nutritious and filling. They are great for breakfast and children's lunch boxes. Instead of using glutenous flour I have used ground almonds and flaxseeds. You can make this as a whole loaf using a 1llb loaf tin and baking for 1 hour.
Lucuma is a South American fruit high in beta-carotene and B Vitamins and makes a great natural sweetener.
Ingredients
3 very ripe medium bananas, mashed
50g butter, melted and cooled
2 tbsp xylitol
1tsp ground cinnamon
2 tsp vanilla extract or 1/2 tsp vanilla powder
1/2 tsp each of bicarbonate of soda and baking powder
1 tbsp lemon juice
200g ground almonds
40g ground flaxseeds
1 tbsp lucuma powder (optional)
3 large eggs
pinch sea salt
Directions
Preheat the oven to fan 170 degrees. Place 6 paper mini loaf cases on a baking sheet.
Place all the ingredients into a food processor and blend well.
Pour the mixture into the loaf cases and bake for 30 minutes.
Leave to cool completely on a wire rack.
Eat straight away or store in an airtight container in the fridge for up to 5 days.
