Monkfish Curry

 

I normally use monkfish in my Thai Yellow Curry but as I'm on a Liver Detox I didn't want to use lots of coconut milk. Instead I made an easy Indian style curry. 
I sautéed 1/2 teaspoon black mustard seeds in coconut oil until they began to pop then the other spices (1/2 teaspoon each ground turmeric, Cumin and coriander and a pinch of Chilli and black pepper).
I then blitzed half a tomato, 2 garlic cloves and some fresh ginger and 3 tablespoons water in my Nutri Bullet to make a paste. I added this to the pan to cook until the water had evaporated. I then added some leeks and grated cabbage and let it steam sauté with the lid on for a few minutes before adding the monkfish. With the lid on this takes about 8 minutes. I added pre roasted sweet potatoes and chopped fresh coriander and ate straight from the pan! 

This could be a great Phase 2 or 3 Metabolic Balance meal. If in phase 1 omit the oil and use some water or stock.
