Moroccan Sardine and Parsley Salad


With Houmous, Sweet Potato and Tahini Pomegranate dressing

A tangy and sweet lunch today using store cupboard tinned sardines for my protein and omega 3. 
Salad made with cucumber, lots of flat leaf parsley and spinach. Add a dollop of humous sprinkled with spicy paprika and baked sweet potato slices.
Dressing - tahini, pomegranate juice, olive oil, lemon juice and sumac. A slightly tart dressing which offsets the oily sardines.
