One Pan Chicken Basmati Rogan Josh
Having bought 8 chicken thighs for the family supper tonight I had no idea what I wanted to do with them!
All my usual recipes didn't appeal. I wanted something spicy for a Friday night but it had to be children friendly. So a curry was the answer. But feeling really lazy I decided not to cook the curry and rice separately but to just through it all in together. It worked! The chicken was beautifully tender.
On the stove I gently cooked through Rohan Josh spices, fresh turmeric and ginger and garlic. I added the chicken and rice and poured the hot stock over with a tin of tomatoes. I cooked it in the oven for 45 mins and served with green veg. Easy Friday night supper!
