Orange and Nectarine Chia Pudding
I like to try and use local ingredients when I'm in Spain. The fruit is so good here. For a change to my normal Chia breakfast I added the juice and zest from an orange. I used cashews for my nut milk as they only need 4 hours soaking and no straining.
Chia seeds are a great source of fibre and omega 3. Orange peel is higher in vitamin C than the flesh and also contains considerable amounts of calcium, copper, magnesium, vitamin A, folate and other B vitamins.
Ingredients -
100g cashews and 300mls water blended for 2 minutes
Juice and zest of 1 orange
1.5 tablespoons Chia seeds
Slices of nectarine
Method -
Mix the Chia with 1 cup of Cashew milk and the orange juice and soak overnight. In the morning add some of the grated orange zest and nectarine slices.
