Poached Eggs with Avocado on Cumin Roasted Squash 


Yummy Tuesday breakfast! 
I often warm leftover veg from the night before for breakfast or lunch the next day (cook once, eat twice). 
This Butternut Squash was roasted with sumac and cumin seeds. I love these spices and they go with everything. Delicious with Avocado and poached eggs with a sprinkling of cayenne pepper which is a good anti inflammatory.
