Prawn and Multi Green Veg Stir Fry 

 

Stir Fries are such an easy meal when you are short of time. Tonight this is what the family are getting! They had theirs with brown rice noodles but I prefer just to load up on extra vegetables. 

I heated coconut oil in a large sauté pan then added chopped kale, chopped tender stem broccoli and chopped Swiss chard. I added freshly grated ginger. Cooked briefly then added the raw prawns, lime juice and Tamari. To finish I drizzled on sesame oil and some chilli flakes. I did add some Avocado too. 

This is a great way of getting in your daily dose of leafy greens. You can add some more colour with red peppers if you can tolerate them.
