Quick goats cheese salad
In winter I love to add something hot to my salads. Today I really felt like goats cheese.
I often don't have time for the grill to heat up so I put some unflavoured coconut oil in a hot pan add the cheese and 2 minutes later it's done. Add salad leaves and any leftover veg you have and it's a quick meal. I made a basil, garlic and olive oil pesto here. Using a handheld blender blitz basil leaves, crushed garlic, olive oil and a pinch of pink Himalayan salt.
An espresso and a square of dark chocolate to finish! Yum!
