Quinoa & Turmeric Eggs Brunch Bowl
A delicious combination of scrambled eggs, quinoa and prebiotic (leeks) and probiotic (miso and apple cider vinegar) foods for a healthy gut.
1/2 cup cooked quinoa (I like to cook mine in vegetable stock for extra flavour)
1/4 tsp turmeric powder
2 leeks, finely sliced
1/2 tsp black mustard seeds
1/2 large avocado
1 handful leafy salad greens
1 tsp miso paste
1 tablespoon olive oil
1 tsp apple cider vinegar
Heat some coconut oil in a pan then add the black mustard seeds and cook until they start to pop. Add the leeks and sauté for approximately 5 minutes until softened.
Melt a little coconut oil or ghee in a small pan and cook the turmeric for a minute then add the eggs. Don’t over scramble the eggs which will ruin the healthy fats.
Slice the avocado and arrange everything in a large bowl.
Mix the dressing well and drizzle over the leaves and avocado.
