Quinoa & Turmeric Eggs Brunch Bowl

A delicious combination of scrambled eggs, quinoa and prebiotic (leeks) and probiotic (miso and apple cider vinegar) foods for a healthy gut.


  • 1/2 cup cooked quinoa (I like to cook mine in vegetable stock for extra flavour)

  • 2 eggs

  • 1/4 tsp turmeric powder

  • 2 leeks, finely sliced

  • 1/2 tsp black mustard seeds

  • 1/2 large avocado

  • 1 handful leafy salad greens

  • 1 tsp miso paste

  • 1 tablespoon olive oil

  • 1 tsp apple cider vinegar


  1. Heat some coconut oil in a pan then add the black mustard seeds and cook until they start to pop. Add the leeks and sauté for approximately 5 minutes until softened.

  2. Melt a little coconut oil or ghee in a small pan and cook the turmeric for a minute then add the eggs. Don’t over scramble the eggs which will ruin the healthy fats.

  3. Slice the avocado and arrange everything in a large bowl.

  4. Mix the dressing well and drizzle over the leaves and avocado.
