Red lentil stew

 

I'm feeling the cold now I'm back home after my holiday so I decided something warm for lunch was much needed.
Red lentils are a great store cupboard essential as they don't need pre-soaking so you can have a meal in 20 minutes. They are a great source of protein.
Some people also find them easier to digest than other lentils.
I sautéed onion and garlic then added black mustard seeds, turmeric and other spices. Carrot, cauliflower, sweet potatoes all added then some vegetable stock. Cherry tomatoes cooked through for the last few minutes. Fresh coriander to serve. 
A deliciously filling lunch with lots of flavour.
