Salmon and vegetable one pan dish 

 

A quick lunch was needed today but I felt like something cooked. Luckily I had left over baked sweet potato from last night to add to sautéed leeks and spinach. I heated spices and some fresh ginger before adding the veg and wild salmon. Put the lid on and 7 minutes later lunch was ready! I drizzled some coconut aminos and chopped coriander. Yum!
