Salmon with Mustard Marinade and Butterbean Mash

  • 2 Salmon Fillets


  • 2 tsp whole grain mustard

  • 1 lemon. zest and juice

  • 1 teaspoon olive oil

Bean Mash

  • 1 Tin butterbeans, drained and rinsed

  • 1 garlic clove, crushed

  • 2 tablespoons olive oil

  • 1 large handful watercress, chopped


  1. Heat oven to 200C. Place salmon in a baking dish.

  2. Place marinade ingredients into a bowl, mix and pout over the salmon. Bake for 10-12 minutes.

  3. Warm olive oil in a pan and add garlic. Add butterbeans and watercress. Warm though for a few minutes then roughly mash.

  4. Serve with Samphire or leafy greens.
