Salmon with Mustard Marinade and Butterbean Mash
2 Salmon Fillets
2 tsp whole grain mustard
1 lemon. zest and juice
1 teaspoon olive oil
1 Tin butterbeans, drained and rinsed
1 garlic clove, crushed
2 tablespoons olive oil
1 large handful watercress, chopped
Heat oven to 200C. Place salmon in a baking dish.
Place marinade ingredients into a bowl, mix and pout over the salmon. Bake for 10-12 minutes.
Warm olive oil in a pan and add garlic. Add butterbeans and watercress. Warm though for a few minutes then roughly mash.
Serve with Samphire or leafy greens.
