Shaved Purple Asparagus Salad with Tahini Soy Dressing
Asparagus is a real nutrition superstar. It contains lots of vitamins A, C, K and folate. It is a rich source of a polyphenol called rutin, which research suggests may help reduce inflammation, blood pressure and cholesterol and improve circulation. It also has a lot of fibre and the prebiotic inulin. Inulin feeds friendly gut bacteria which improves the immune system.
Cooking Asparagus does increase its nutritional value but it decreases the inulin. Eating Asparagus raw can be delicious especially when eaten in thin shavings here.

2 bunches purple or green Asparagus
2 teaspoons good quality mayonnaise
1 tablespoon tahini
2 teaspoons Tamari
1 crushed garlic clove
Zest and juice of half lemon
1. Cut of the tips of the Asparagus and shave the stems using a vegetable peeler
2. Mix the other ingredients together in a bowl and drizzle over the Asparagus
