Smoked mackerel, courgetti, roasted celeriac with salsa verde


This warm salad for my lunch is a great way of using up roasted veg from your Sunday roast. Here I've used celeriac but parsnips and sweet potatoes work well.
Warm the courgetti up in a frying pan with a little water. 
Serve with homemade salsa verde and and a side of avocado.
