Smoked mackerel salad 

 

I love smoked mackerel and it usually has a good sell by date so it's great to keep in my fridge for emergencies as I like to include protein in every meal to keep insulin levels in control. And fish is an excellent source of protein. Mackerel is also high in omega 3. 
Here I have added spinach leaves, leftover cooked celeriac, cherry tomatoes, basil leaves and unpasteurised sauerkraut (from a small family run UK company which I will be stocking soon to sell). Finished off with a mustard olive oils dressing.
