Smoky Barbecue Marinade
Shop-bought BBQ sauces are often filled with sugar and thickeners like wheat. This is a very easy home-made one that can be frozen for up to 6 months. If you can’t find Chipotle chilli powder use normal chilli powder. You won’t get the smoky flavour so try changing the paprika to a smoked paprika.
200g tomato pureé
4 tablespoons apple cider vinegar
4 tablespoons apple juice
1 tablespoon honey
2 tablespoons coconut aminos or Tamari
2 teaspoons fish sauce
1 teaspoon sea salt
1/2 teaspoon black pepper, freshly ground
1 tsp sweet paprika
1 teaspoon Chipotle chilli powder
1 teaspoon Dijon mustard
2 garlic cloves, crushed
1 onion, chopped
Put all the ingredients in a blender until well combined.
Use the marinade for chicken pieces or other meat. Marinade overnight or for at least an hour.
You can also make this into a sauce by adding 4-6 tablespoons water before blending then simmer over a medium-high heat for about 20 minutes.
