Socca is a pancake made from chickpea flour (gram flour) and is a typical food from Nice. It's naturally gluten-free so I always keep this flour in my fridge ready to make a quick batter when I feel like something similar to pizza.
Mix one cup chickpea flour with one cup water, tiny bit of salt and olive oil.
Here I have topped the socca with sautéed courgettes, mushrooms, garlic and chilli and finished with fresh coriander. The chickpea flour is naturally high in protein so try and use lots of different vegetables as a topping to make a balanced meal.
