Spanish Gurnard Stew

This easy stew went down well with the family. Taking Vicky's advice I cooked this in a low oven for 2 hours. Perfect as that's how long the brown rice took on my rice cooker that the rest of the family were having with the stew. 

I warmed some olive oil in the pan and added paprika a slices of the giant garlic from fresh fish company. I then added finely chopped leeks. I added the fish fillets and 500ml fish stock and brought to a simmer with the lid on then placed in oven 130 degrees. 
Before serving I squeezed the juice of 1 lemon and chopped parsley. And some spicy paprika powder to serve for my family members that like an extra kick! 
And lots of green leafy veg for antioxidants.
