Super Antioxidant Salad with Walnut Pesto


I try and eat lots of rocket and watercress every day as they are packed full of nutrients. Great for supporting daily detoxification. 
In this salad I have both and added alfalfa, broccoli, mung bean and chickpea sprouts, spiralized courgette and walnuts. I made the pesto dressing by putting the following in a mini food processor and pulsing - 1 large handful basil leaves, 2 tablespoons olive oil, very small handful walnuts and some sea salt. You could also add a squeeze of lemon to this (I didn’t as I’m not tolerating citrus at the moment).
