Roast chicken salad with a creamy cashew dressing 

A big salad at lunch is my daily thing. Today’s salad included my usual rocket and broccoli sprouts along with leftovers from last night - roasted cumin butternut squash and roast chicken pieces. I added avocado some flat-leaf parsley and the dressing.  


Place the following in a Nutri Bullet 

  • 1 tsp cashew butter 

  • 1 tsp brown rice vinegar 

  • 1 tsp coconut aminos or Tamari

  • 1-2 tablespoon olive oil 

  • 1/2 crushed garlic clove 

  • A little grated fresh ginger 

Blend for a few seconds
