Wild salmon buckwheat noodle broth

 

After a busy day with clients and getting ready to launch my new weight loss and health programme I needed to make something quick to eat.
With a huge order from Amazon of buckwheat noodles I turned to the store cupboard for ingredients to add to the wild salmon I had in the fridge. 
I combined sweet miso, tamari and fish sauce and grated fresh ginger in a pan with stock and simmered with some leeks. I boiled the noodles then drained and added to the pan with some lime juice. I stirred in some spinach. Served with some fresh coriander. A delicious immune boosting and gut friendly meal.
