Zahtar Roasted Chicken and Vegetables 


Who doesn't love a one-pan family supper? Just put everything in a roasting pan, cook for an hour at 160 degrees and Hey Presto! 
This is a family favourite in my house. 
I sliced a Cauliflower into thick steaks, chopped 6 leeks, 2 sweet potatoes cut into large chunks, 8 garlic cloves and 8 chicken thighs with bone. I then drizzled over olive oil and sprinkled Zahtar (Sumac, sesame seed and thyme blend). 
This is a great low GL meal containing a good protein source (best protein sources are poultry, fish, meat and eggs so try and include one of these at each meal).
