Crispy Artichoke and White Bean Salad

This tasty Crispy Artichoke and White Bean Salad recipe is taken from my new book Eat Right, Balance Hormones which helps you uncover the root cause of hormonal imbalances and shows how you can adjust your diet in order to achieve a better balance.

Ingredients

Serves 2

  • 160g Marinated artichoke hearts, in olive oil, quartered
  • 400g Tin Cannellini beans, drained and rinsed
  • 150g Cherry tomatoes, halved
  • 120g Marinated mixed peppers, in olive oil, sliced
  • 1 Romaine lettuce

Dressing:

  • 2 tbsp Extra Virgin olive oil
  • Juice of ½ lemon
  • ½ tsp Fresh parsley, chopped
  • Salt and pepper

Method

  1. Preheat the oven to 200ºC.
  2. Spread the artichokes out onto a baking tray, taking some of their oil with them, and roast for 8 minutes. Turn them over then roast for a further 5-6 minutes or until golden and crispy. Drain any extra oil on kitchen paper.
  3. Meanwhile, combine the rest of the salad ingredients in a bowl and whisk the dressing together. 
  4. Add the crispy artichokes to the bowl then toss with the dressing.
