Lime Chicken Thighs

This easy-to-make Lime Chicken Thighs recipe is taken from my new book Eat Right, Balance Hormones which helps you uncover the root cause of hormonal imbalances and shows how you can adjust your diet in order to achieve a better balance.

Ingredients

Serves 2

Marinade

  • 6 Spring onions
  • 15g Coriander, tough stalks removed
  • 2 Cloves garlic
  • Zest and juice of 2 limes
  • 1.5 tbsp Tamari
  • 2 tbsp Olive oil
  • ½ tsp Flaked salt
  • 1 tbsp Coconut oil
  • 4 Chicken thighs

Super Green Cauliflower Rice

  • 200g Cauliflower
  • 200g Broccoli
  • Large handful Spinach

Method

  1. Set aside 1 spring onion then roughly chop the remaining 5. Pulse together in a food processor with the rest of the marinade ingredients into a coarse puree. 
  2. Reserve ¼ of the marinade then pour the rest into a ziplock bag. Place the chicken thighs into the bag and toss around in the marinade. Leave to marinade at room temperature for 30 minutes. 
  3. Preheat the oven to 180ºC. 
  4. Heat the coconut oil in a frying pan over a high heat and fry the chicken thighs, skin side down, for 5 minutes or until the skin is crisp and golden. Place the chicken thighs onto a baking tray and pour over the marinade from the bag. Roast for 30 minutes or until cooked through.
  5. Meanwhile, prepare the rice. Blitz the cauliflower, broccoli and spinach together in a food processor into a rice-like consistency. Heat the reserved marinade in a large frying pan and cook for 2-3 minutes. Add the vegetable rice with a splash of water and cook for 5 minutes, stirring occasionally, until tender. 
  6. Slice the remaining spring onion. Serve the vegetable rice topped with the chicken thighs and spring onion.
