Flaxseed Porridge with Apple and Coconut

This delicious Flaxseed Porridge with Apple and Coconut recipe is taken from my new book Eat Right, Balance Hormones which helps you uncover the root cause of hormonal imbalances and shows how you can adjust your diet in order to achieve a better balance.

Ingredients

Serves 1

  • 2 tbsp Whole hazelnuts
  • 1.5 tbsp Golden flaxseeds
  • 250ml Plant based milk
  • 1.5 tbsp Desiccated coconut
  • 1 small apple, coarsely grated
  • Cinnamon to serve

Method

  1. Grind the hazelnuts in a spice grinder or blender into a fine meal then tip into a saucepan. Grind the flaxseeds in the same way and add to the pan. 
  2. Pour the milk into the saucepan along with the coconut and  ¾ of the grated apple. Stir over a low heat for 4-5 minutes or until starting to thicken. The porridge will continue to thicken as it cools in the bowl.
  3. Serve the porridge topped with the remaining apple and a sprinkle of cinnamon.

Hazelnuts are an excellent source of monounsaturated fats, which are beneficial for heart health. This is particularly important during perimenopause, as the risk of heart disease tends to increase with hormonal changes. Additionally, hazelnuts are a great source of Vitamin E, an antioxidant that helps in protecting cells from oxidative stress. Vitamin E also plays a role in skin health, which can be particularly relevant during perimenopause when skin may become drier and less elastic due to hormonal changes. The antioxidant properties of Vitamin E can help in maintaining skin health and potentially counteracting some of the aging effects associated with perimenopause.
