Grain Free Chia Bircher

This grain free chia bircher can be made in minutes and makes a healthy and delicious breakfast to set you up for the day!

Ingredients

  • ½ cup  mixed  raw pumpkin seeds and sunflower seeds soaked overnight in 2 cups filtered water

  • 20g chia seeds

  • 1 tablespoon ground flax seeds

  • 1/4 cup whole raw almonds, soaked overnight in 2 cups filtered water

  • 350ml filtered water

  • 1 tablespoon coconut flour

  • 1 tsp vanilla extract

  • 1 teaspoon ground cinnamon

Method

  1. Drain the pumpkin seeds and sunflower seeds in a strainer, rinse under cold water, and set the strainer over a bowl to drain thoroughly.

  2. Combine the chia and flax seeds in a medium bowl; set aside. Drain and rinse the almonds and transfer them to an upright blender.

  3. Add the 350ml water, coconut flour, vanilla, cinnamon, and blend until completely smooth, then add the drained seeds and briefly blend or pulse until the seeds are roughly chopped.

  4. Pour into the chia mixture, stir well to combine, and set aside for 25 to 30 minutes, until thick and creamy.

  5. This can be eaten straight away or stored in an airtight container in the fridge for up to 4 days. It will thicken further in the fridge.

  6. Serve with fruit of choice. Here I pan fried some pear slices in a no. Stick pan.
