Griddled Asparagus with Lemon and Poached Egg

Research has shown that eating asparagus may help prevent insulin
spikes and protect against diabetes.

This griddled asparagus with lemon and poached egg dish is taken from my book ‘Eat Right, Lose Weight’ which helps you discover your metabolic type.

Ingredients


Serves 1
(Di, I, C, De, T, O, S)

  • 65g asparagus
  • 1 tsp extra virgin olive oil
  • 1 large egg
  • zest and juice of 1 unwaxed
  • lemon
  • Salt and pepper

Method

  1. Brush the asparagus with olive oil and cook on a hot griddle for 3 minutes. Turn over and cook for a further 3 minutes or until tender.
  2. Meanwhile, poach the egg. Transfer the asparagus to a serving plate and squeeze over the lemon juice and zest.
  3. Top with the poached egg and plenty of salt and pepper.
