An easy one-pan dish that you can vary depending on what vegetables you have. I like to look at recipes on a Sunday to inspire me for meals the week ahead. I found this herby roasted cod recipe on my website and realised I hadn’t made it for ages! My website is my library so it’s easy to find my old favourites. I suggest you keep a record of your favourites by making a Saved Recipe folder here on Instagram and also use the handy App called Pocket where you can copy and paste the website pages of recipes you find and like the look of.
Serves 4
Ingredients
-
4 pieces of cod or other firm fish like salmon or hake.
-
4 tablespoons olive oil ⠀
-
1 medium red onion, finely chopped ⠀
-
3 red/yellow peppers, roughly chopped ⠀
-
3 garlic cloves, crushed ⠀
-
1 head broccoli, small florets removed ⠀
-
1 lemon, sliced
-
To serve – handful basil leaves and finely chopped flat-leaf parsley ⠀
Method
1. Heat the oven to 180c⠀
2. Warm the oil gently in a large shallow casserole dish (I like my 30cm le Creuset) ⠀
2. Sauté the onion and peppers gently for 10 mins. Add the garlic and cook through for a few minutes. ⠀
3. Place the cod on top and and tuck in the broccoli and lemon and drizzle over 2 more tablespoons olive oil. ⠀
4. Bake in the oven for approximately 15 minutes until the fish is cooked through. Chunkier pieces of fish will need longer. ⠀
5. Scatter over the herbs and serve with a big green salad. ⠀
